El 1,2,8 y 9 de marzo de 2023 se dictaran los cinco cursos obligatorios para cumplir con la 21CFR121 o regla de Adulteracion Intencional
Capacitación curricular aprobada por la FDA de Defensa Alimentaria, en línea y en español, títulos oficiales.
La Defensa Alimentaria es el esfuerzo por proteger los alimentos de los actos de adulteración intencional. En mayo de 2016, la FDA emitió la regla final sobre “las estrategias de mitigación para proteger los alimentos contra la adulteración intencional “ 21CFR121, con requisitos para que las instalaciones cubiertas preparen e implementen planes de defensa alimentaria.
De acuerdo con 21CFR121.4, el personal, y sus supervisores, que trabajen en los puntos más vulnerables en una instalación, están obligados a tomar una capacitación de concientización sobre defensa alimentaria y tener la educación, capacitación o experiencia para implementar adecuadamente estrategias de mitigación. Además, están obligados a la preparación del plan de defensa alimentaria, la realización de evaluaciones de vulnerabilidad, la identificación de estrategias de mitigación y la participación en actividades de reanálisis que deben ser realizadas o supervisadas por personal con capacitación o experiencia adicional, estas capacitaciones son las ofrecidas durante cuatro jornadas.
Veamos los requisitos clave:
Las instalaciones cubiertas deben desarrollar e implementar un plan de defensa alimentaria que incluya un análisis de vulnerabilidades e implementación de estrategias de mitigación.
1. La regla requiere un plan de defensa alimentaria por escrito para todas las instalaciones cubiertas a menos que se aplique una exención (21 CFR 121.5). El plan escrito debe incluir (21 CFR 121.126): • Una evaluación de vulnerabilidad para identificar vulnerabilidades significativas y pasos de proceso procesables, y explicaciones asociadas • Estrategias de mitigación y explicaciones asociadas • Procedimientos para el monitoreo de la defensa alimentaria • Procedimientos para acciones correctivas de defensa alimentaria • Procedimientos para la verificación de la defensa alimentaria
2. La regla requiere capacitación para cierto personal. Véase la sección "EDUCATION, TRAINING, AND QUALIFICATIONS" (21 CFR 121.4)
3. La regla requiere que las instalaciones cubiertas mantengan el plan de defensa alimentaria como un registro, así como registros de capacitación, monitoreo de defensa alimentaria, acciones correctivas de defensa alimentaria y verificación de defensa alimentaria. (21 CFR 121.126(c), 121.140(c), 121.145(b) y 121.150(c))
4. La regla requiere un reanálisis del plan de defensa alimentaria. (21 CFR 121.157)
Todo esto se verá durante cuatro jornadas de capacitación, a distancia o en forma presencial.

Intentional Adulteration Rule
FDA’s final Intentional Adulteration (IA) rule is aimed at preventing intentional adulteration from acts intended to cause wide-scale harm to public health, including acts of terrorism targeting the food supply. Such acts, while not likely to occur, could cause illness, death, and economic disruption of the food supply, absent mitigation strategies. Rather than targeting specific foods or hazards, this rule requires mitigation (risk-reducing) strategies for processes in certain registered food facilities. Food Safety Preventive Controls Alliance (FSPCA) Intentional Adulteration courses were developed to provide a low-cost solution to complete the training requirement found within the Intentional Adulteration rule.
On-Site Training: The Foreign Supplier Verification Programs (FSVP) training courses are developed by the Food Safety Preventive Controls Alliance (FSPCA). All training sessions will be taught by me FSPCA FSVP lead instructor and upon completion of the course, you will receive a certificate from the FSPCA, AFDO, and IFPTI. To receive an official training certificate, attendees must stay and participate throughout the duration of the course

FSPCA FOREIGN SUPPLIER VERIFICATION PROGRAMS (FSVP) COURSE
Description: This course will provide participants with the knowledge to implement the requirements of the “Foreign Supplier Verification Programs (FSVP) for Importers of Food for Humans and Animals” regulation of the U.S. Food and Drug Administration (FDA). This regulation is one of a number of regulations and guidance that implement the provisions of the 2011 Food Safety Modernization Act (FSMA), which focuses on safe food practices. This course is designed for:
- U.S.‐based importers who meet the definition of “importer” in the FSVP rule, which includes those who own or are the consignee of food at the time of entry, or, if no owner or consignee exists, the U.S. agent or representative of the foreign owner.
- Others who have an interest in ensuring that the requirements of the FSVP rule are met, including brokers, exporters, foreign suppliers of food that will be exported to the U.S., persons and/or business owners who currently buy food from foreign sources, and representatives of foreign governments.
The FSVP curriculum was designed by regulatory, academic, and industry professionals and developed with funding from the FDA as part of the FSPCA. In contrast to the Preventive Controls (PC) rules, the FSVP rule does not require you to attend a training program following a “standardized curriculum” recognized by FDA. Furthermore, attending this course, will help you understand the FSVP requirements and how those requirements can be met in your particular circumstance.
The FSVP training is in English but answers can be given in Spanish, if it’s necessary.
As I am the Lead Instructor of Preventive Controls for Human and Animal Food, as well as the Lead Trainer of the PSA (Produce), the answers are very clear even for those who do not know about food safety.
